Pumpkin Tahini Chocolate Chip Cookies

Ingredients:

1 1/4 cup almond flour

3/4 cup tahini

1/4 cup pumpkin puree

1/8 cup maple syrup

1 cage-free egg

2 tbsp cinnamon

1 tsp baking soda

1 tsp pure vanilla extract

1 cup dark chocolate chips

1 scoop collagen peptides

1 tsp sea salt or Himalayan salt

Instructions:

1. In a medium bowl, mix up the almond flour, tahini, pumpkin puree, maple syrup, cinnamon, pure vanilla extract, collagen, and chocolate chips

2. Refrigerate the batter for 30 minutes and preheat oven to 350 degrees

3. After cooling, add in your egg and baking soda until everything is evenly mixed. Scoop out cookies (size of your choice) onto a parchment paper lined baking sheet and toss them in the oven for 10-12 minutes

I sprinkled sea salt on top prior to putting them in the oven but you can do this step after they cook as well!
