chicken apple-avo salad
Ingredients:
1/2 chicken breast
1/2 chopped gala apple
1/2 diced avocado
2 handfuls of spinach
1/4 red onion
1/8 cup chopped pecans
1 tbsp dried cranberries
1/2 tbsp chia seeds
1 tsp bee pollen
1 tbsp coconut aminos
1/2 tbsp ghee
Instructions:
1. On medium heat, cook chicken in ghee on stovetop
2. While chicken is cooking dice apple, red onion, avocado, and pecans
3. In a small bowl, combine all diced ingredients and add chia seeds, bee pollen, and dried cranberries
4. Once chicken is finished, add into the bowl to mix
5. Poor mix onto a bed of spinach and top with bee pollen and coconut aminos if desired!
