kale & butternut squash salad
Ingredients:
1 butternut squash
1/2 cup quinoa
1 can chickpeas
2 handfuls of kale
1 apple
1 tbsp coconut oil
1 tbsp coconut aminos
Instructions:
1. Preheat oven to 400
2. Bring small pot of water to a boil and add quinoa
3. In a medium bowl, drizzle chopped butternut squash, kale, and chickpeas in coconut oil, sea salt, and pepper. After seasoning, lay ingredients flat on a baking sheet or pan and bake for 20 minutes
4. After baking, combine sheet bake, quinoa, and chopped apple to bowl
5. Drizzle with coconut aminos and enjoy!
